On-the-Run Egg White Protein Breakfast Muffins

One of the most interesting and useful aspects of egg white protein powder is that it’s basically just an egg white. This means that, with a little creativity and adaptability, you can use egg white protein powder in a very similar way to how you might use eggs. To help you get started cooking with this highly nutritious, protein-rich powder, here is a recipe for breakfast muffins that you can easily make ahead and grab on your way out the door.
- 3 ¼ cup Naked Egg White Protein Powder
- ¾ cup cheese of your choice, shredded
- 2 tbsp plain Greek yogurt
- Water, as needed
- Salt and pepper, to taste
Preheat your oven to 350 F and spray a 12-cup muffin tin. Place 1tbsp of cheese in each tin. In a mixing bowl, combine the remain ingredients and stir until thoroughly mixed. Use the water to thin the mixture as needed. It should resemble raw, scrambled eggs. Fill each tin with the egg mixture and place in the oven. Bake for 20-30 minutes or until slightly golden on top.
